Abstract: Head and neck cancer is a common malignancy with a high mortality rate and poor prognosis. Quercetin, a flavonoid, is commonly found in many fruits, vegetables, and medicinal herbs and has a variety of biological and pharmacological effects. It has been shown to have anti-tumor effects on a variety of cancers, including head and neck cancer, and can effectively prevent and treat head and neck cancer by inhibiting tumor cell growth, inducing tumor cell apoptosis, inhibiting tumor invasion and metastasis, inhibiting angiogenesis, reversing drug resistance, and enhancing chemotherapy sensitization in a variety of ways. This paper aims to review the mechanism of action of quercetin in treating head and neck cancer in recent years.
