摘要: 硝酸盐-亚硝酸盐-一氧化氮体系在机体中发挥重要生理作用,在多系统中具有广泛的应用前景。亚硝胺是环境中常见的一类致癌物,与食管癌、胃癌等肿瘤的发生密切相关。亚硝酸盐作为亚硝胺的前体物,在特殊条件下可形成亚硝胺,其安全性受到广泛的关注,目前明确维生素C、维生素E等抗氧化剂和多酚类物质可抑制内源性亚硝胺的形成。本文将综述与亚硝酸盐相关亚硝胺的来源、致癌风险及其影响因素。
